Çorum Leblebi

The first flavour that comes to mind when you say Çorum: the story, varieties and sourcing of the registered, traditional roasted chickpea that has become the city's emblem.

Leblebi — roasted chickpeas — is Çorum's best-known emblem. The city is considered the historic centre of leblebi making, and the phrase "Çorum leblebi" is used across Turkey almost as a mark of quality.

🏅 Geographical indication

Çorum leblebi is registered as a geographical indication (mark of source) with the Turkish Patent and Trademark Office (registered 2002). The registration ties the product to a defined production method and quality standard — including criteria such as the size and quality of the chickpeas used — so the name cannot be applied loosely.

🔥 How it is made

Leblebi making takes patience. Carefully selected chickpeas are moistened and rested, then roasted in several successive stages; through these stages the skin separates and the kernel becomes crisp leblebi. The craft lies in getting the roasting temperature and timing exactly right.

  • Yellow leblebi — the classic, with skin on.
  • White (peeled) leblebi — skin removed, softer.
  • Sugar-coated / glazed — coated with sugar, chocolate or colour.
  • Spiced kinds — salted, chilli and aromatic options.
