Söbelek Dolması (Stuffed Morel Mushrooms)

Söbelek Dolması is one of the regional dishes listed on the official “What to Eat?” page of the Çorum Provincial Directorate of Culture and Tourism and on Çorum Municipality’s gastronomy page. “Söbelek” — also called “söpsölek” or “söbelen” in local speech — is the regional name for the morel mushroom (Morchella), which grows wild in meadows and pastures around Çorum in spring.
What Is Söbelek?
The söbelek mushroom is a wild mushroom gathered over a short spring season, recognizable by its honeycomb-like cap. Çorum Municipality’s published “Çorum Regional Dialect Dictionary” records a folk saying linking the gathering of söbelek to the district of Kargı: “Söbelek, elicek, koç mantarını / Toplamaya doyum olmaz Kargı’nın” (“One never tires of gathering söbelek, elicek and koç mushrooms in Kargı”). An academic gastronomy study (Şahin, 2019, Journal of Tourism and Gastronomy Studies) likewise classifies Söbelek Dolması as a product identified with Çorum’s Kargı district.
Preparation
The gathered mushrooms are cleaned, sorted by even size, and washed, then stuffed with a filling usually made of bulgur (rice in some recipes), onion, parsley, and spices. The stuffed mushrooms are cooked over low heat with a small amount of water until the filling and the mushrooms absorb the liquid. The dish is typically served with garlicky yogurt drizzled over the top.
Place at the Table
Because of its seasonal and limited availability, Söbelek Dolması is considered one of the rarer dishes of Çorum cuisine; the provincial culture directorate’s official food list groups it alongside other regional stuffed dishes and doughs such as İskilip Dolması, kömbe, oğmaç, and hingal. It does not hold geographical indication registration with the Turkish Patent and Trademark Office; academic sources classify it as a candidate for “mahreç işareti” (indication of source) status.
