Toyga Aşı
Toyga aşı is one of the long-established yoghurt soups of Çorum cuisine — a filling, nourishing winter dish made with cracked wheat, chickpeas and yoghurt.
What it is
Toyga aşı is made by cooking boiled cracked wheat and chickpeas tempered with whisked yoghurt. The yoghurt is usually beaten with egg or flour so it does not split while cooking; sizzling butter and mint are drizzled on top. It is the Çorum name for the dish known across Anatolia as “yoghurt soup / toyga / ayran aşı”.
The Çorum interpretation
In Çorum, toyga aşı is not only an everyday winter soup; it also appears as the “wedding soup” element of the traditional Çorum beşlisi wedding spread. Enriched with cracked wheat and chickpeas, it becomes a more filling “aş” than an ordinary yoghurt soup.
Cultural significance
