Baharatlı Bayat Dolması
Baharatlı Bayat Dolması (“spiced Bayat dolma”) is a regional stuffed dish from Çorum’s Bayat district, made with rice or with bulgur ground from the district’s hard wheat, and seasoned with a distinctive blend of spices.
Difference from İskilip Dolması
In 2023, Bayat Municipality’s geographical indication application triggered what local press dubbed the “dolma wars” with the registered İskilip Dolması of the neighbouring district. Bayat Municipality stated that the two dishes are distinct: Baharatlı Bayat Dolması is made with rice or bulgur ground from the district’s hard local wheat, seasoned with spices, and finished with olive oil for a lighter texture; it is traditionally served as part of a menu that includes lentil soup, cacık (yogurt-cucumber dip), grape or köpen fruit compote, tirit (bread soaked in broth) and un helvası (flour halva). İskilip Municipality, for its part, noted that TÜRKPATENT’s “mark of origin” designation requires only that the raw material or one stage of production take place in a given locality, which is why distinct local versions of the same base dish — as with köfte, mantı or pide elsewhere in Turkey — can each hold separate registrations.
Social Significance
Baharatlı Bayat Dolması has long been prepared for large gatherings such as weddings, religious commemorations (mevlit) and family reunions. Following the 2023 earthquakes centred on Kahramanmaraş, charitable residents of Bayat, coordinated with the Çorum Governorship, reportedly served the dish to 4,500 earthquake survivors in Afşin, Kahramanmaraş.
Geographical Indication Application
Bayat Municipality filed an application with TÜRKPATENT for a mark of origin under the name “Baharatlı Bayat Dolması” on 17.10.2022, file number C2022/000349 (TÜRKPATENT Geographical Indications Portal).
