Çatal Aşı Soup

Çatal aşı soup is a traditional Çorum winter soup made from green lentils and yarma (coarse cracked wheat), simmered in a sauce of onion sautéed in butter with mint and red pepper. Ingredients
- 1 cup green lentils
- 1 cup yarma (coarse cracked wheat)
- 1 onion
- 2 tbsp butter
- 1 tbsp salt
- 1 tsp red pepper powder
- 1 tsp dried mint
- 6 cups water
Method
- Melt the butter in a pot and sauté the finely chopped onion until it turns pink.
- Add the mint and red pepper and sauté briefly.
- Pour in 3 cups of water; once boiling, add the green lentils and simmer 20 minutes.
- Add 3 more cups of hot water along with the yarma; simmer for about 20 more minutes.
- Season with salt, lower the heat and simmer 10 more minutes before serving.
